Curried Pineapple Rice

Curried pineapple rice

This fruit and curry rice is super as a side dish for baked fish filets. It’s adapted, slightly, from a recipe in The Ultimate Rice Cooker Cookbook.

Combine in your rice cooker bowl:

One cup of long-grain white rice
1.5 cups of water
One tablespoon unsalted butter
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Close the lid, and start the rice cooker. In the meantime, prepare the following ingredients:

One green onion, sliced thin
1/2 cup finely chopped fresh pineapple
1 cup green seedless grapes, cut in half lengthwise
1/4 of a bell pepper (any color you like), minced

1 cup of peeled and diced cucumber, for garnish
Lime wedges

When the rice cooker signals it’s done, add the onion, pineapple, grapes and bell pepper. Close the lid and let steam for another 15 minutes, then stir to combine. Serve with cucumber on top and lime wedges on the side.
